Producer Silvio Sanchez's agronomy training shines through at his farm, Santa Teresa de Mogoton, in La Union, San Fernando (in the Nuevo Segovia region of Nicaragua). His neatly planted Catuai trees yield cherries that are weighed and pre-checked on the farm, then transported in plastic boxes to the dry town of Ocotal, where they are laid out in full sun on African beds at the Expocamo mill. Farms around these hills practice agroforestry, growing coffee under shade alongside fruit and hardwood trees, which results in rich soils, heavy cherries, and nuanced flavors. You'll find notes of strawberry, dark chocolate, and blood orange in the cup.
