Mexico Santuario

Wonderstate's Mexico Santuario is sourced from 30 dedicated farmers in the Santuario community within Mexico's El Triunfo Biosphere Reserve buffer zone. This organic coffee represents Wonderstate's deepening partnership with the Triunfo Verde Cooperative. Grown at 1,500-1,700 meters in Chiapas, these heirloom varieties, including Bourbon, Caturra, and Typica, thrive in biodiverse environments where natural shade trees create a cooling microclimate that extends maturation and enhances flavor complexity. Hand-picked cherries undergo traditional washed processing with up to 48 hours of dry fermentation before patio drying. Roasted slightly darker than typical single origins, this coffee delivers layers of rich dark-chocolate-cookie flavors, sweet toffee candy notes, and subtle raisin fruit tones, with citrus and herbal notes emerging as it cools, making it excellent for both filter brewing and single-origin espresso.
