From the elevated terrain of Jiwaka in Papua New Guinea’s Western Highlands, this rare natural lot highlights the depth of heritage coffee, Arusha, Bourbon, Mundo Novo, and Typica, growing between 1,520 and 1,770 meters above sea level. Harvested and dried as whole cherries through a month-long natural fermentation at Kindeng Wet Mill, the processing unfolds slowly under the cool highland air before final milling at Kagamuga Dry Mill. Expect an intriguing flavor profile: juicy notes of yellow dragon fruit woven with Cabernet Franc–style wine and a rich, rounded finish reminiscent of chocolate taffy. This light-roast offering is a testament to smallholder collaboration and forward-thinking mill innovation, resulting in a coffee that’s as expressive as it is rooted in tradition.
