This Maragogype lot from Goshen comes out of the small village of Toloxcoc in Guatemala, where producer Jaime Morales Milian has steadily shifted his eight-hectare farm into full specialty production. The rare, large-bean Maragogype variety dominates the farm and undergoes about 38 hours of fermentation before drying in the sun on raised beds. The result is bright and elegant, with notes of key lime and golden pear. Look for a soft hint of persimmon rounding out the finish.
