High in the Hambela region of Guji, coffee grows slowly and steadily in the cool air and rich soil. Producers tend larger plots around the Goro washing station, three to fifteen hectares each. The cherries here dry slowly, often over forty days, developing sweetness and depth with every hour of sun. The result is a vibrant, elegant cup with notes of juicy pomegranate, rosé, and dark chocolate.
